Venison steaks and beer!

I laid out a pack of 1/2" thick venison steaks yesterday. I took a meat tenderizer and pounded the steaks a little bit. Rubbed some olive oil on them and then sprinkled Seasoned salt & seasoned pepper on both sides and dredged in flour. I left them sitting on a plate in the fridge for an hour or so and then got a skillet hot and flash seared them on both sides. Just a minute or two on each side. Took them out of the skillet and put a spoon full of diced garlic and a large onion sliced up thin in with some butter and sautéed them for a little bit until the onions were soft. Then I put the steaks back in the skillet and covered them with the onions/garlic. Sprinkled a little worcestershire sauce across the top and poured Guinness stout in the pan until it was about 1/2" deep. I put a glass lid on the skillet and turned it to low to a very slow simmer and let it slow cook for about an hour.

I served it with a side of bacon wrapped asparagus bundles.... Incredible!

Sorry Top. I imagine anything I bring to Baltimore to prepare is going to be swine of some sort. Kinda of dealing with an over abundance of pig right now...

just curious............do you remember way back to home canned pork sausage...........damn......of course you don't ......your still a pup.........what was i thinking. :?: :?: :?: :?: anyway.........before we had a freezer on the farm way back........sausage was seasoned ......made up into balls or patties and home canned. no matter what or how or where i buy sausage now.........it never has the flavor or taste that the canned sausage had back then when it came out of the cast iron frying pan.

Yes, I remember canned sausage. Some of the nastiest looking stuff you could imagine coming out of the jar but tastes great. It was pretty good but nothing compared to the canned tenderloin. I actually thought about canning a couple of these tenderloin to save freezer space. Never heard of canned sausage balls. All I ever saw were canned patties.
